Ingredients Of Besan Kadhi

  • 1 cup yogurt
  • 1 cup gram flour
  • 1 tsp turmeric
  • 1 tsp chilli powder
  • salt to taste
  • 1 tsp garam masala
  • 4 cups water
  • 1/4 cup oil
  • 1/2 tsp asafoetida
  • 2 tsp cumin seeds
  • 2-3 Whole red chillies
  • 1/2 Coriander powder
  • 1/2 Jeera powder
  • 5 to 6 curry leaves

For the pakoris:
  • 1 cup gram flour
  • 1 tsp salt
  • oil for deep frying
  • 1 Boiled potatoes
  • 1/2 tsp Fennel seeds

How to Make Besan Kadhi

1. Mix the gram flour, turmeric, chilli powder, Coriander powder, Jeera powder and salt with yogurt gradually to form a smooth paste, and then add the water. As shown in the pic.

2. Heat the oil in a large, heavy-based pan; add the asafoetida, cumin seeds, curry leaves and the whole red chilies.

3. When the cumin seeds begin to splutter, add the flour and yogurt mixture slowly and bring to a boil. As shown in the pic.

4. Simmer over a low heat till it thickens a bit. Add water if needed.

Prepare the pakoris:

1. Mix the ingredients listed above into a smooth batter with enough water to form a thick dropping consistency. Let the batter rest for at least 15 minutes. As shown in the pic.

2. Beat the pakori mixture till light and fluffy. Make small pieces out of it and keep aside.

3.  In a deep frying pan, heat oil.

4. Reduce heat to medium and fry the pakoris.

5. When the pakoris fluff up, and the base becomes golden-brown, turn them over and brown on the other side.

6. Scoop out the pakoris from the oil and drop them into a kadhi. Repeat this procedure with the rest of the mixture.

7. Transfer the hot kadhi into a serving dish.

8. Heat the clarified kadhi, add the chilli powder and pour over the kadhi in a bowl immediately to garnish.

Serve with hot rice.
