About Recipe
It is a very delicious and popular dish prepared almost in all households of Odisha. It goes good either with rice or with roti/paratha.
Ingredients:
1. Potol / Parwal / Pointed Gourd (300 gm).
2. Potatoes (250 gm).
3. Chopped Onion (1 medium size).
4. Tomato chopped (1 medium size).
5. Ginger paste (2tbsp).
6. Green chilli paste (5 nos).
7. Turmeric powder (1tsp).
8. Cumin powder (½ tsp).
9. Red chilli powder (½ tsp).
10. Garam masala powder.
11. Cumin seed ( ¼ tsp).
12. Dried chilli (2 nos).
13. 2 Bay leaf.
14. Sugar (as per your taste).
15. Salt (as per your taste).
16. Mustard oil.
Preparation: Step by Step
1. Heat the pan and pour mustard oil. Fry the potatoes very well. Keep aside.
2. After this fry the potol pcs. Add ¼ tsp salt and ¼ tsp of turmeric powder. Keep aside.
3. Take 3 to 4 tbsp mustard oil in hot pan.
4. Add ¼ tsp cumin seeds, 2 bay leaf, 2 dried red chilli. Fry for 10 to 15 sec.
5. Add chopped onion and fry till become golden brown.
6. Add tomato chopped. Fry for 1 min in medium flame.
7. Add 2 tsp ginger paste, green chilli paste. Mixed it well. Cook for 2 min in medium flame.
8. Add ½ tsp of turmeric powder, ½ tsp cumin powder, ½ tsp red chilli powder, ½ tsp salt, and ½ tsp sugar. Add little amount of water (2-3 tbsp). Mixed it well. Cook for 2 min in high flame.
9. Add Fried potatoes and fried parwal. Mixed it well. Cook for 2 min in medium flame.
10. Add 1.5 cups of water. Now cook in high flame.
11. When boiling close the lid for 5 min. Cook in medium flame.
12. After 5 min open the lid.
13. Taste the salt and sugar. Add more as per your taste. Now cook in high flame.
14. Add ¼ tsp garam masala powder and 1 tsp of ghee. Mixed it well.
15. Put off gas oven. Close the lid for 5 min.
16. After 5 min serve hot Aloo Potol Rassa with steamed rice, roti, paratha etc.
